If I see it right, the status column in the users module toggles the blocked status of the Joomla user? not the subscription to the newsletters.

And if a user cancels his subscription he cancels all mailings. If I have multiple (automated) newsletters, the user can't cancel only 1 newsletter but still receiving another one?

Yes, there is single subscription. No concept of Lists as the component doesn't store user or subscribers. They are same as Joomla users.

You can create multiple lists by using Joomla User custom fields (type radio). And then send the newsletter to users whose custom field value equals 1. You can group these fields in custom fields group (like subscriptions).

So, a user can subscribe to one or more lists simply by toggling the radio switch.
